To a certain extent it depends how familiar you are with the game.
Most singleplayer FPS/RPGs can be played without sound. You might suffer a littlebit but generally it is not a big deal.

I like playing Terraria while listening to podcasts.
I guess RPGs but that depends if it's dialogue heavy.

Personally I would say my #1 is playing Quake3 / QuakeLive against bots.
It's basically meditation.
Most top down games work extremely well because they tend not to rely on sound cues at all - Diablo 2/3, Torchlight 1/2, Nox.
