Totenkinder was the most badass character and it sucks she wasn't in the game.
It also always amused me that despite what the game impliesBigby isn't even Sherrif all that long.
For the record, I also believe the rewrites were done because of a throw away line they initially missed in the first issue where Jack mentions the Boy who cried Wolf still lived in the apartment block.

It's a plot mechanic. Fables who are common knowledge to anybody through like books, movies, and urban legends are borderline invincible.
Bigby was famous for both Three Little Pigs and Little Red, and Snow White is also pretty tough thanks to Disney.
As for the dickbag Jackhe at one point buys a movie studio so he can make blockbuster versions of his stories to make him the most famous Fable of all so that he literally can't die.
