Like the final Vergil fight in DMC 3, it's hype and I think more thought is involved for the guy fighting.
Old Iron King, as an example, always felt like more of a puzzle than anything else because of the way he was interacted with.
I voted for Ludwig, because I think it's the best "epic" boss fight in Souls.

Darklurker is not only fun to get too but also set you up agains a boss that purely use magic as a meens to attack and mixes up his attacks so they aren't easly predictable but still fair.

I've recently completed DeS again.
I didn't like the majority of bosses. The final 4 bosses for 2-5 we're all gimmicks, and I only enjoyed Astrea from those. Old Monk is hit and miss.
Flamelurker, penetrator (when the NPC didn't one shot him), and the two defilement bosses were good. Allant was a great boss. But besides that the rest wasn't great.
My hardest boss fights have probably been in Bloodborne. Defiled Amygdala and Ebratias was extremely difficult.

Maybe now but not when he first came out. There wasn't anything like him except maybe Penetrator in theme or Flamelurker in adrenaline.
He was the first crazy, flippy, spectacle fight and was very memorable regardless the difficulty. Outrolling his attacks without a shield is still one of the most fun things in the series. The moveset is just right. All others after him just try to copy that style of boss: Alonne, Fume Knight, maybe even Burnt Ivory King, but even then the original is the best.
What so special about Lidwig, except that he was a tough boss and pioneered boss stages? All he did was spawn a meme and make fanboys think they were tough for beating him. Worst part is:he's fucking UGLYand grotesque

Ludwig is more intense when it comes to dodging, has a better soundtrack, and has better pacing as far as the battle goes. I don't usually like second stages, but fighting him with the Moonlight greatsword was amazing.
False Allant also did all that shit before Artorias, and so did Gwyn. People say he's easy because he can be parried, which might be true if you're good at parrying, but he's still generally more fun to fight, and a much more awe inspiring fight.
Artorias is just one of those bosses where you have to memorize his moveset to fight him without a shield because he has a lot of very short telegraphs. I suppose people who like memorizing enjoy that, but I prefer bosses where if you have a sharp eye you can dodge everything on the first attempt.
There's also not really any strategy other than "dodge and attack". O and S is a fight that involves strategy and planning, and a lot of other boss fights involve strategy in terms of where you will attack, how far you will stand to bait attacks, what kind of offence you will use, etc. Artorias is pretty much just "dodge to the side, attack when you can"

Second form is bullshit. He never stops moving, and his attacks sweep so much that it becomes a game of luck at that point. You can dodge perfectly, but you might just get hit anyway because he's spinning in a weird circle and his attack is covering him in a 360 degree area for multiple seconds.

I wouldn't call it a duel at all since his moveset is so vastly different than a normal player. Again, he's just like any other boss. Gywn had a more "human" moveset than Artorias that made him more duel-like. Artorias just felt like another giant human with a big sword (which, granted, is exactly what Gwyn is too, but despite thinking Gwyn is better than Artorias, he still isn't my favorite.)

Even if other bosses were fast or intense in the past I never felt it like that, except maybe Flamelurker but there is that sense that you are fighting an equal that outclasses you and not an overpowered being. I didn't feel it the same way with other bosses before but that is just me.
Plus Artorias had this aura of being the Superman of his universe and supposedly being on your team well not literally but someone who you shouldn't be fighting but were put there due to circumstances with the task of moving forward and only option being having to best him. I'm not saying he shouldn't be your favorite, but everything you've said about him is just "He's my favorite because I really like the way his character is portrayed". There's not really much to be said about the actual fight because, like I said, it's a standard boss fight that doesn't really have anything special. He's not as fast as a good number of the other bosses, he doesn't hit as hard as a good number of other bosses, he doesn't really have any strategies like a number of other bosses, his fight is kind of just... standard. It's not bad by any means, but there's nothing noteworthy about it.
If he was "Random Knight" and had no backstory, he would get as much recognition as the Penetrator, I guarantee it.

To elaborate on this I mean that Artorias' design is that he hits and backs off while other bosses before him, like Flamelurker, Allant, Gwyn if you made a mistake and got hit and even stunlocked you would be dead, while Artorias is more of a duel where you exchainge blows and are fighting a war of attrition, but you have to have a character on the low HP side to feel it.
Penetrator is maybe like that but he is very punishing too so I'm not sure you can exchange blows if he stunlocks you.
