The game isn't that easy early on so it's not that surprising. Make sure you're not underleveled and get the proper oils, and bombs if you need them. Learn the patterns of the werewolf and it shouldn't be too bad. I wouldn't adjust the difficulty unless it's getting intolerably challenging, because once you leave Velen the game becomes a cakewalk even on the hardest difficulty.

It's a bit more complicated than that. The witchers are generally disliked because they are simply strangers, outsiders, something out of the general order of things. The fact that they don't have a very good standing in the society makes sense.
That said: their position and standing changes over time. The intro/trailer cutscene pretty nicely sums it up: whenever there is a MAJOR war around, the value of a witcher grows immediately, and that changes the attitude of people towards them.
Also, it generally does make sense that people would talk behind a pitcher's back differently than they treat them face to face: especially during the times when monsters are plentiful.
Finally, Geralt is a pretty damn unique example of a Witcher, since he is quite literally a living legend by the time the games are happening. Complete peasants aside, basically every single noble person or even average merchant has likely heard heroic stories of his exploits. He has served kings and lords: he has been knighted once, and every single of his grand stories has been captured, then romanticized the fuck out by one of the most popular bards of the world.
Hell, Priscilla wrote a song about Geralt and Yennefer before she even MET the guy, that is how legendary he is. That changes the attitude of people as well.
