That's six, anon. Of course, there's two of every kind up until Cathedral/Sheol, but they're the exact same level.
But I will definitely grant that the alternate floors in Rebirth (Cellar, Necropolis, Uterus) make up. It's just that there's not such a big difference between 6 and 5, especially if you consider each level in Gungeon to take as much time as an XL level.

The thing is about Gungeon is that while it doesn't have nearly as many floors, each floor is much bigger than a normal Isaac floor. Runs end in 40+ minutes on average, more so if you do the secret floors.

I think the appeal of it comes from the variety of different items which do some batshit crazy synergies if put together.
But I think the RNG of Isaac fucked over the game from a technical level. You can decide the fate of a run with one good/bad item/pill. Nuclear Throne and Gungeon actually test your skill by keeping most weapons balanced.
