What RPGs allow me to completely customize my party members' classes and physical appearances?
Pic related is somewhat in that vein. It's more a hunting game than an RPG, but you have complete customization over yourself and your robotic humanoid assistant (including gender).

Dragon's Dogma lets you customize yourself and your pawn thoroughly in a fashion similar to Freedom Wars.
