It depends on the game but these controls are nearly universal for the series:
X - cannon
Square - expand map
Triangle - switch target / hold to focus camera on target
Circle - fire missile
LS - roll
RS - strafe
D-pad - give orders (5 and 0)
L1 - brakes/decrease thrust
L2 - turn right
R1 - increase thrust
R2 - turn left
Select - switch to special weapon
Start - pause
