Every Souls game differs greatly from the last, but all the Uncharted games are hallway cover shooters with quicktime events and big budget cutscenes.
The first Unchated is a meek cover shooter with obnoxious as fuck characters. Uncharted 2 was actually good with some interesting scenarios and the climbing/prince of persia bits as well as a pretty decent multiplayer.
Uncharted 3 was a garbage rehash.

im at the end of the second game and there was literally only 3 quicktime events from the first and second game combined.
and the cut scenes arent even that long.

That said, I like Dark Souls gameplay much more than Uncharted. Uncharted is a one and done thing, but Dark Souls encourages replayability.
However, thats not to say Souls games arent "rehashy". Your first Souls game will actually be a challengeif you go in blind like a normal person, but afterwards every one after will feel easier and easier.

The reason why its ok with From is because there aren't any other developers doing the things they're doing. Look at their Armored Core release dates, they sometimes released two games within the year and this was perfectly acceptable because From were the only ones making games like Armored Core. Nothing else really comes close.
Same with the Souls series. Some western shit developers will probably steal their ideas and try to roll with it but it won't be the same because it lacks that From quality that you see in all their games.
From software have basically created a throne for themselves where they can sit comfortable and rehash as many games as they want and people will buy it because there are few games in the industry doing what From does.
You don't get that with games like Uncharted, CoD, or any mainstream AAA game because there are tons of developers are doing similar games.
