I honestly feel like after a month, there isn't anything to bitch about anymore and after this update SFV won't be seen in such a shitty light anymore. Sure, it had a rough launch but that doesn't change the fact that the game is fun as hell and it's settled very nicely, and this update is going to cement that stability as will the rest of the updates in the future.

The down time between matches really kills me. When I'm on a streak I want my fights to come as fast as they can. I don't want to have to stop to watch the fucking challenger screen, white screen, earth screen, character screen, white screen, and match. It wouldn't be so bad if it would match you up faster.

Depends on who you play.
In general, V-Reversal. Most will knockdown the opponent or at the least will let you escape. A few characters' Reversals are shitty and many knockback Reversals aren't safe since they have a long startup of 10 or 15 frames, the opponent can throw you before your reversal's active frames if they're close enough.
Beyond that, you'll just have to learn each character's pressure motif and related frame data. Anyone competent will dish out blockstrings that push you apart so you can't retaliate even if they use frame negative moves. Look for any opening.
Even if all you're doing is hitting them with a jab or two to push them back, escaping to a neutral state is better than having them pounding on you.
