In undertale the less a monster wants to fight the more damage youll deal thats why if you keep fighting you do more and more damage until you kill them outright.
In undertale as well you need to pretend to actually be a child with the actions to play the game properly, if you see a dog you pet and plsy with the dog, if you see toriel mad at you you dont fight, you accept your beating and dont fight back, if you see skeletons you flirt with them and eat their pasta

Asgore is really stretching the whole "not fighting" thing. In its defence, after a certain point nothing else happens in that fight with the other options so perhaps you should try fighting. The game does also advice for this but its not really conveyed that well. All dummy fights though, easily unfightable.

Only after you have done neutral run first. You can go full pacifist only after doing one neutral run. And before you complain, you can just reload your completed neutral run and do the remaining things to reach the pacifist ending.

As far as I know most monsters don't really try to kill you and are instead dangerous because of what they are. Like fire monsters wanting to be nice but being made of fire they are dangerous.
I'm playing through the game for the first time and... I don't get it.
I'm in a similar place to OP, I killed Toriel or whatever. I don't find the game particularly intuitive or interesting. I don't understand the love for the soundtrack, I don't care for the characters (although admittedly I've only gotten as far as the skelly brothers, who I find to be gratingly annoying).
My friend gifted me LISA a few months back and I really enjoyed it. Graphics were decent for an indie game (none of this ATARI level bullshit), story was engaging, gameplay was simplistic but fun...
I think maybe it's because Undertale was so hyped. Because it has threads daily on /v/. because it went up against Ocarina of Time for best game ever. If I hadn't had this game thrust in my face for so many months, maybe I could find it... decent? Beyond that, I doubt it.
As it stands, I actually dislike the game. I don't know if the overabundance of love for this indie pixelshit is to blame, or simply the fact that I don't think it's good or well made...

Toriel can't actually kill you as far as i could see. once your hp is at under 3 she actively avoids your heart, even if you move towards her attacks.

Best ending is the Neutral ending where you date undyne, then kill 9 monsters (one of who must be Mettaton Ex). The underground becomes human-friendly, and Undyne sinks into a powerless depression.
Second best ending is the Neutral ending where you kill the shit out of everyone except Toriel and Papyrus. Underground falls into anarchy but you've cleared out a lot of the hostile-to-humans ones.
Third best ending is Genocide, of course.
