F-zero X and F-zero GX both have insane mechanical depth and incredibly high skill ceilings. the top players of each game all have thousands of hours of practice invested into them over very long periods of time.

Fuck no. There's no skill involved in any arcade racers. Simulators demand precise controls, precise speed and precise braking. And on top of that, try playing them on the hardest difficulty. What do arcade racers offer that is even remotely hard? Super fast speed? Well, racing simulators offer those too.

I think its mostly because in wipeout there's walls in every track except sol-2 and in f-zero you can actually go off the track so youre more likely to crash in wipeout then fall off a track, but I could be wrong.

It's interesting you say this, because F-Zero actually has an active competitive community, while the vast majority of sim racers are deader than fuck. If they were actually competitive games with a skill ceiling worth talking about, they would have a competitive community.
There is all kinds of evidence that it takes more work to get good at an F-Zero game than any other racing game.
