I assume most people that download a demo were interested in the game anyway. Then there are 2 possibilities
interested customer likes the demo: he buys the game (would've probably bought it without a demo too)
interested customer doesn't like the demo: he doesn't buy the game
So the best case scenario is that the dev didn't lost a customer

Three reasons: It doesn't help profits with nearly everyone having access to the internet. Why create 1-4 hours of demo gameplay when they can just release cinematic trailers and say "buy game nao pls" and have gaming sites shill for them.
It would allow people to realize they don't actually enjoy the game after playing the demo meaning a loss of a sale.
Many, many games are released unfinished and buggy. This means in a demo, people can realize the game is terrible and isn't worth the AAA price.
It also means less time spent on making DLC to charge even more money for.

Thanks to modern internet download speeds, indie developers will give/sell you alpha/beta access to the game that they can continually update

Demos have been phased out, for the most part, except on consoles, where having a system that updates the games often is unfeasible thanks to red tape set up by console devs

How time consuming is hacking the game to pieces and sell it bit by bit? The only game that i've seen had content added to it that actually feels like they worked on it after the release of the game was Red Dead Redemption.

because they have to go through a submission process, just as games. It's a pain in the ass for developers. It's the same reason why some developers release the demo AFTER the final game, it takes time, money and work.
