I never felt I get spoiled when it comes to souls for some reason. The story and lore are always somewhat vague and it takes some time for people to piece them together and seeing gameplay or bosses doesn't really spoil anything for me.
It feels kinda weird since so many people are anxious as fuck about not seeing any DaS3 spoilers, it's just not that kinda game to me.
