I'm level 35 and just beat The One Reborn and am about to do the optional areas of Upper Cathedral Ward and Nightmare Frontier. Should I level up or keep going at this level? What level were you?

35 is fine for the nightmare frontier, very low for the upper cathedral. 35 is pretty low if you've already gotten far enough to get the key for the upper cathedral ward

Not really. It's a very popular weapon, but unlike the Drake Sword it will actually last you throughout the entire game + the chalice dungeons if you decide to do them.

Oh, fuck, wait, were you actually talking about the Drake Sword itself? If so, it's pretty good for the early game, but once you get past maybe Sen's Fortress, it's damage will start to become pitiful. Upgrading it would remedy that somewhat, but dragon scales are very rare and it also costs a hefty 10k souls to upgrade it.

Use a stabby weapon.
Evading the grab is easy, just dodge backwards one or two times. I'm assuming you're having trouble with him because of his bullshit spell? If you spot him first, just beat the shit out of him. Stabby weapons will kill him fast. Otherwise, watch his animation closely, if you pay attention you can definitely dodge the projectile.
A legit question I just beat Darkbeast Paarl and I have my Saw Cleaver+5 with fire gemstone is there a better weapon at this point of the game because I just grabbed Tonitrus and hit like shit compared to my cleaver.

Depends entirely on your play style. Saw cleaver is extremely good and idiot proof (R1 spam is very effective), but other weapons might be better for you if you like hitting hard rather than fast.

Why is the Reiterpallasch the best weapon in the game? It stuns Vicar Amelia, Ebrietas, and Mergo's Wet Nurse out of their second phase shit. The shot damage is respectable, as well.

Hitting L1 itself uses no durability, and it loses no extra durability when buffed. It's just a fragile weapon in general. It gets a ton of its damage from the buff, so there's no reason to ever swing with it unbuffed unless you're doing the rebuff mid-combo swing.
