Is it good idea to level up the faster i can? Or i'm gonna fuck things up? By the time i have played i can say that if I get stronger enemies will remain the same and wont get stronger, or i'm just stupid and haven't notices that they become stronger if you become stronger?

Yeah sure level up as much as you can, enemies won't get stronger. Spend some souls on upgrading your weapon of choice too though, it helps a lot more than levels.
You're supposed to go up the stairs from Firelink shrine, not down in the catacombs
Don't forget, upgrade your weapon before spending souls on leveling.
Just keep going anon. Stop at 120-125 if you plan on PvPing. You should be around level 50 by Anor Londo and 75-100 by the end depending on how you spend your souls. If you have an armor set you like, try to get it fully upgraded and do the same for weapons as upgrading is generally more of a plus than just gaining levels.

Play however you like. You can't break the game in any meaningful way. There is no level scaling nor is there any real reason to distribute levels a certain way. You want more HP? Go for it. Stamina instead? Knock yourself out. Anyone telling you there is a right way to play is autistic as fuck. You can beat the game slinging spells wearing nothing or with a basic sword in heavy armor never dodging.
Enjoy the game, grind a little here and there, and don't listen too much to guides.
It's a good idea to meet the requiorements for weapons and magic (that you wanna use) before you pump your points into anything else. Other than that it doesn't really matter what you do next then.

Is it Scholar? If so it's quite a bit harder than DaS I feel. You should do fine regardless of build, just summon and NPC if you're having problems.

buy shards and large shards in anor londo, or farm the slugs in blighttown. chunks are rarer and can't be bought but can be farmed in new londo after draining the water. the spooky skeleton knights drop them and will rarely drop titanite slabs for upgrading most weapons to +15.

just pour your XP into levelling resistance, its the best stat long term. Every time you level up, take your resistance up 1, make sure its at least 40 before you start levelling up the other stats.

Can you not go to the bonfire after the archers, open the cathedral doors and run back from there? Can't remember which way the twisty staircases work for gywndolin but you must be able to set the bridge up so you can get there from one of the bonfires without doing the rafters walk.

Well if I die to Gwyndolin I'll have to do the rafters because there's no way to send the stairs up to the first bridge without going up yourself. I don't really care about the rafters, it's just that I'm scared that once I have killed Gwyndolin I'll be teleported back to Anor Londo without a warp EVERY time I die.

zwei is the shit, literally just a big ass claymore and it is very easy to get. Once I get endgame though, I roll with black knight greataxe. I love the move set and does big damage, too bad they fucked it up so bad in dark souls 2.

I think demon souls is the least forgiving out of all of the souls. The bosses are mostly easy and you shouldn't have too many problems but the levels can be very tough and much easier to get lost in. Having half health for nearly all the game is a bummer as well.

you should hit SL 95-100 doing this. I got to SL 103, but that was only because I tried farming darkwraiths for a slab for like, an hour, and wound up with a bunch of extra souls.
Using a similar approach, you can go to SL 200-210 in DaS2, and BL 95-100 in BB
