1 has better levels, 2 has way better monsters and balance. Doom 64 is okay and is pretty spooky.

Honest answer, play 1 and 2 vanilla first, no mods, original sprites, kb+m but no looking up and down and no jumps because that's basically cheating in original Dooms. Make sure to get original music because it's fucking iconic, think Zelda iconic except in the West.
This will give you the best taste and experience from which you can build further. So custom maps, mods and shit. Some people swear by Brutal Doom, but mentioning it is guaranteed shitstorm so leave it for later.

PS1 Doom games are just watered down ports, with new audio that doesn't fit the old artstyle. Just play the PC versions + Doom 64 EX.
