I thought 8, 16, etc... bit meant number of pixels.

There's really no reason to go higher in bits, it's just processing speed of those particular bits that matters now.

dunno if that's going to happen. The growth of PC processing power and memory sizes has started to decrease in the past few years, and unless we get some brand new fad to boost the growth again, bit like how games did push home PC specs forward quite a bit in 90s, we might be dealing with mere couple hundred GB of RAM by the end of this century. Especially since cloud-computing's becoming more and more common nowadays; even some upcoming Xbone games use network connection to link up all the available consoles and their servers in the world to provide some advanced physics-driven destruction calculations in the games.
