If i can get a PC with specs capable of playing 99% of games for roughly under £600, then what's the need/ point in shelling out £1000-£2000+ for a ridiculously high spec PC? Apart from simply being able to say "this is how high my specs are", what's the benefit, game wise, of spending that much?

Plain truth is the average gamer doesn't need a top of the line rig, no. They might have other uses for the hardware besides games, but if we're talking gaming only. But if it's not "good enough" to do that 99% at max settings at 1080p 60fps, then it becomes a question of what you're ok settling with - in many cases you can still play games that don't quite make that cut, by lowering resolution a bit, and with max settings you're not really going to feel much loss.
On the opposite end, if you're some mega penis faggot who wants to do his shit on a 4k display the size of an elephant, you damn well better put the money down to handle it.
