One-way roads are your friend. Use metros to move people over great distances. Have bus stops do short routes to pick people up or drop them off at metro stations. Taxis are useless.

put simply, just think of your traffic as the human circulatory system. arteries and capillaries. highways into avenues into roads into streets. make your zones distinct and self-contained. look at the branches of a tree.

RED CONGESTION DOES NOT MEAN BAD, IT MEANS YOUR ROADS ARE BEING USED. Only worry if you can actually SEE the congestion piling up

No, they take the fastest route. Speed limits are used as the pathfinding weights. If you have a highway that joins to a 6 lane road, but has an on/off ramp either side connecting to an overpass, cars will take the ramps if they join to the 6 lane road further than the highway does.

no, all car GPS navigation does it get you from point A to point B in the shortest amount of time. they may use live traffic data to shortcut around congested roads and things.

If you pack services and zones too tightly together, drivers will only take the lane closest to their exit destination.
If you give them more room to travel between intersections, they will spread to other lanes to avoid congestion.
You can use policies to mitigate industrial and tourist traffic.
You can intelligently use public transit to relieve congestion.
You can stop putting intersections everywhere, reducing traffic lights.
You can consider typical traffic flow in your city and build roundabouts, one way roads, and/or sidewalks/bike lanes to accomodate it.
You have several very simple answers but give up and say "shit game" instead because you're upset the game doesn't solve itself.
