common demonic symbols are horns, the color red, fire. cacodemons (and almost all demons in Doom) have horns and red shades. notice how in doom 3, they all look grey or brown and smooth, without horns.

We've kind of moved beyond the idea of the brightly colored comic-book representation of what's considered "Hellish" since then, it's not exactly surprising that videogames are following suit.
You can have an issue with the designs, not going to take that away from you. But trying to play that as "They're not demonic enough" is too weak of a point. Likely the only reason you're taking that angle in the first place is because it sounds objective, where "I don't like the artstyle" comes off as complaining about the game's artstyle not fitting your personal preference, which it has absolutely no obligation to do.
