Asylum Demon was a great opening boss fight
Of course he's piss-easy in later playthroughs but he sets the tone of the game quite nicely
Capra Demon is the one boss fight that takes place in a tight corridor
Iron Golem fight was pretty fucking cool, given that it's on a fairly small platform and he's so fucking huge
The only boss I didn't like was Bed of Chaos, the rest were varying levels of good and the O&S fight was pretty much perfect.

Gaping Dragon was beautiful to look at but the battle itself was rather lacking.

It's a pretty cool moment when you fight Gwyn and he lunges at you for the first strike and if you've gotten good you just parry him back like a boss

Iron Golem was the only memorable boss for me, it had the best setting completed with the soundtrack, the design wasn't anything special but was fitting.
I actually didn't find anything special from Dark Souls boss fights aside from this one.
