It's difficult because there is no perfect way to aim where you land, the moving platforms are farther out on the grid and the delay of falling combined with the speed of the platform made timing difficult

The Deku game is made significantly easier on the 3DS version, because the Deku Scrub form shows you a target exactly where you'd land when you let go of the flowers. They did the same thing in Wind Waker HD with the Deku Leaf.

Although easy to actually get, the hardest to find had to be the heart piece 2/3 of the way through Turtle Rock in LttP. It was just so out of place considering where ally he others were and what was required for them.
Of course, the "hardest" in that game was definitely the shovel mini game prize, followed closely by the chest opening game.
