Brutal Doom is the always popular one, and while it can be fun, it's highly unbalanced, I always recommend others.
Action Doom 1 and 2 are excellent in their own regards.

Bloodpack is another good one with crazy weapons

I can't name many maps, but Sunlust and BTSX are two good choices
Consult >>330046908 for more maps or launch Zandro/zdaemon and look at all the popular coop/survival mappacks that get played. Avoid slaughtermaps though cause your computer will screetch to a halt (or you die instantly from all the shadow monsters that 1 shot you).
Any good wads for Doom?
I've always liked Neogold.wad or whatever, that crazy city-themed one that eventually goes to places like a jungle, hell, and random temples.

If you just want an enchanced vanilla experience try out Smooth Doom. It makes everything better.
If you want more, I recommend Trailblazer, Project Brutality, Pirate Doom. I've heard Guncaster and DoomRLArsenal are good, but they don't seem like my kind of thing.
For maps I recommend Back to Saturn X, Hellbound, Scythe (hard), Alien Vendetta (fucking hard), D2Reloaded, Doom The Way Id Did (only for Doom 1 but still great).
