Well there are two possibilities:
1. Name could be different in game because their current title is different, like Gwyn, in the intro he's called Lord of Sunlight, but his boss name is Lord of Cinder.
2. These may be the japanese names, so the translation will obviously differ.

And nothing really stops a character from having more than one alias.

22 not counting DLC, 26 with it. DeS had 18 and no DLC, DaS2 had 31, 32 after the Aldia patch and 41 after DLC. BB had 17 and 22 after DLC.
Judging by the details on the season pass for 3 and what the original plans for BB's DLC were that appear to be carrying over here, DaS3 will likely have 25 with all it's DLC.

Yeah I forgot. Proper bosses from them off the top of my head were Abhorrent Beast, Bloodletting Beast (x2), Yharnam, Hotdog, Keeper, Undead Giants (x a lot), the two different Pthumerian guys and the Absolute Madman.
So BB vanilla has at least 27 unique boss fights.

No. These are lords of cinder, five of them.
They're not the beings with lord souls like in previous games. Instead those are basically the "chosen" ones that rekindled the first flame, like the protagonists of DS1/2 potentially did.
