How? This fight is not difficult. It is far from the hardest of Souls bosses. You simply evade poke and repeat. Stop his buff by staggering him in mid animation.
How do people find him hard? The only easier boss in the game is the Asylum Demon.

I had died to him at least 15 times before I finally kicked his ass. Motherfucker can change directions midair if you dodge in a bad moment. The fight should be much easier with more i-frames or poise but i'm sure it can kick the asses of most midrolling anons.

It's all about the rolling. Hit him only once, he recovers too fast, so queue that roll action as soon as you attack And make sure you can drink estus safely, he charges you the moment you press the button
Artorias isn't a particularly hard fight, since two thirds of his moves are easy to dodge.
My problem with him was my first fight against him I was a fairly low level, and the other third of his moves (namely the jump attacks and the quick stab) would hit more often than not and take away 60% of my health, or one hit kill me in the case of the dive. Which wouldn't be a problem if he didn't have a ton of hp and armor, making the fight really long.
So for me, while it was a much better boss than nearly every boss in the game, it was inevitable that I would fuck up, get killed, and have to do the whole thing over again.
Especially to the fucking dive attack, where it was basically a crapshoot whether or not it would actually let me dodge it.
