They're probably equally influential. Quake brought the FPS into full 3D, whereas Duke3D emulated real spaces for the first time in a major shooter.
Quake did more for modding though and started the golden age of modding

DF's engine was actually reverse engineered from Doom's, then they added stuff onto it like looking up and down, jumping, crouching, 3D objects and some other hacks that made it seem like you could have floors over other floors.

That's just your momentum. You do not slide in either Doom or Quake. Quake can do slopes at any angle, Doom has stairs made of 90 degree angles.
The horror aspect of Quake will be lost on most playing it today.
You have to play one of the ports with usual input scehemes(WiiQuake), or crippled input(any of the initial console ports).
Quake just do not play well at max speed when you are accurate. Sure, it speedruns well because physics is a amazing thing once it gets going, but that isn't good for casual play.
Also fuck the various ports for disagreeing on how to play back the Soundtrack.

It's not a matter of aging, to be honest. The core gameplay itself is still solid and only lacks in variety, but the level design level design in Wolf3D was always extremely lackluster. Despite what we might have felt when playing these games our first times, especially if we hadn't seen other similar games before, their hook is in the levels being interesting.

As an engine, not really. Others at the time were doing the same and just like how Wolf/Doom picked up where Ultima Underworld began, Quake was following and just trying to make the concept run faster.

I've always preferred Quake to Doom, it has a great atmosphere, actual 3D level design and it's still nicely moddable.

Not really, it has a lot of potential but they filled the game with so much unremarkable shit, from boring enemies, lazy hub themes, and copy/pasted weapons from 1 that felt worse, that it simply couldn't live up to Hexen 1.
It still has its moments though.
