Except the game never asks you to kill those enemies again, yeah it's a bunch of quests to waste you time, but they aren't repetitive, and if properly planned can be accomplished while doing the main quests. The escort missions are so you'd visit those places, and if carefully planned can be combined with main story quests, and are just free experience.
I didn't buy the game, but it's pretty good. You need to give it some time and patience though.

I'm not trying to imply you're a baddie but every encounter thus far has been totally trivial for me and for most of them I only had my own pawn + default starter pawn Rook. The only thing that's given me an ounce of trouble has been the first escort quest, and that's because you can't directly heal allies by going into the menu and using curative items, and if you're not a mage yourself then you have to rely on pawns to heal the useless escort NPC.

Since you have the mob locations memorized I'm assuming you're a vet of the game, but I don't think he exaggerated the amount of wolves that much. Going out at night from Cassardis to Gran Soren felt like fighting wolves every ten steps. If you go from Cassardis to the Witch Hut there are a ton as well. Maybe not DROVES AND DROVES of wolves, but since they provide no challenge and sometimes have a tendency to draw out fights but running around, yeah, it feels like a giant wolf-flavored waste of time.

I played Tera and Vindictus and I can outright say that neither of them play like Dragon's Dogma.
I keep dying on the part where you go in a dungeon type place under the big city. It spirals down and then there are snakes that spawn on the bottom.
On my 1st attempt I got to the giant before the snake spawns and having a close fight. I climbed his back and was barely hanging on and the mother fucker falls off and kills himself and i survived the fall. I was so happy. Then I go to that thing in the middle and the snakes spawn. No problem so far, but whre are my pawns? OHHhh they are busy running all the way back up for some reason fighting every mob i skipped while all these god damn snakes are attacking too.
I keep trying to do the place over and over but I keep dying. My sword does fuck all against monsters unless my mage enchants it which only seems to happen when theres 1 mob left.

Pawns learn from your actions right? So if I'm playing as a sorcerer and turn my pawn into a fighter, will he be an absolute coward? I know inclinations matter a lot, but aside from those, would me playing as a "sit in the back and kill enemies from a distance" kind of a character hamper my "i'm gonna be in the smack-dab middle of things and draw everybody's attention" pawn 'behavior development'?

Turning on "loudness equalizer" fixed it for me. Give it a try.
Turn on Loudness Equalization. That fixed the problem for me. Works for every game with quiet audio.

This is neither here nor there but the PC port of Alone in the Dark would run at like 12 fps unless the user set their sound to mono. Now THAT is a weird port sound issue.
It's a fun game but it's not the 2nd coming of Jesus that everyone makes it out to be. Quite enjoyable but don't go in expecting all the bullshit /v/ spouted about it.

I think it's hilarious how /v/ complains about how casual and lame games are nowadays, and a game comes along that is super fun, but has a few flaws they get all butt hurt and start complaining.
This game is not perfect, no game is. It has more flaws than other games in its genre. The story is stupid, the world is generic, the graphcis arent that great.
But the gameplay is so kinetic and awesome. so much shit happens and the abilities are so smoothly exectuted, it's great.
You have to be over 12 to overlook the flaws to see the diamond.
