Turning off random encounters is a good thing. Random encounters has always been the worst method of enemy encounters in JRPGs, and FF9 never had random battles worth a damn, outside of sheep, but if you're there you're gonna be there specifically to fight the sheep anyway. Bravely Default's encounter system was a great concession.

Most JRPGs these days don't have random encounters though. It does make it very hard to go back and play older ones though. At least most emulators have speedup.

It depends how much you can get out of a battle, like some games can grant you a lot of extra stuff xp/ap/items/weapons/armor/creatures/ then if game has some other character development tools like saying do something in a battle x times or do this combo or kill this without getting hit and you get this upgrade etc. Essentially make it a rewarding thing and not a chore, ff9 does grant you the Ap on the weapons though so the encounters do make it so you'll get more skills but it's the fact that it was so slow to get in and out.

I'm not sure you really understand what the problem is. Of course you get rewards for winning battles. That's an entirely separate issue to the gameplay implementation of those battles being random.
In Bravely Default I preferred to turn off battles and explore the area freely and then turn them back on to max and grind at the end. That way I get to see all the encounters without having my exploration annoyingly interrupted every few steps.

that just sounds very very boring, I get wanting to explore the area without interruptions but then just sitting there grinding it out after you already explored since there won't be anything new you'll just get bored so quick, plus you shouldn't be grinding in JRPGs anyways, encounters are there so you get a steady pace into the leveling while exploring and finding new things then reach the boss and if you lose from the boss you can decide to grind a bit or not.

You're making a rather loose interpretation here. By "grind" I just mean fighting enough enemies as I would have from going through the area with encounters turned on, not spending two hours grinding so I can OHKO the boss.
In this way I can split up the exploration and combat aspects of gameplay rather than having one interrupted by the other.
