There's been so much build up to Guts being presented with the choice of sacrificing the rpg party to beat Griffith that Miura would be a hack not to make that a future plot point. My guess for how the series ends is that Guts drags himself out of the spiral portal to hell while screaming Griffith at the top of his lungs. Griffith's heart starts beating like crazy and he's frozen in place which allows Guts and the mangled apparitions of the Band of the Hawk members to latch onto him and drag him to hell. The final frame of the manga is a healed Caska leaving a bouquet of flowers in front of the Dragonslayer while a white hawk is perched on itbutt buddies forever

I wanna get away from the typical party setup but from experimenting without a healer it's really tough in the beginning, consumeables are scarce and money is tight, so I can't dismiss the Mage for example yet, but what about a Fighter? Can 3 yellows and 1 mage make a good party, or is a fighter recommended still?

The original Hellsing anime is almost a completley different story compared to the comic, the OVA follows the story much closer and doesn't skip over alot like the Berserk movies did. There is nothing wrong with mage. You don't need as much healing items, especially Halidom helps a lot. I like to have mages with more than one enchantment, so the sorcerer doesn't need any and can concentrate on casting spells.
Mage still has some great attack spells, you don't always need the big ones, actually sometimes it's even a bad idea to only cast those.

if you are only going to have one magic caster in your party a mage is better, sorcerer only has curing petrify and stat down over mage, and will either do the same damage or less as a mage depending on how much their casting gets interrupted.
Sorcerers really shine when you have two or more, spell sync is extremely powerful.
