I dropped foliage to the bottom and shadows to the bottom, did a couple of fixes like moving PhysX interactions to the CPU instead of GPU, and now I can run most outdoor locations at 60 FPS. Have a 770 as well. Everything else maxxed out.

If you have a problem with dialogue heavy games, if you don't give a fuck about the settings and characters, there is not much point in playing TW games. Anon, the story goes simply that there's the Witcher novel trilogy which is followed by the game trilogy.
So no, the first book won't really help you with stuff you've missed out on in Witcher 1 but the games are designed so you could play them even without playing the previous ones or having read the books.
It's all just a bonus just like you can play Gothic 2 without having played the first one... you'll just miss out on stuff that was put in for continuity like meeting with old friends or mentioning old events.

Enhanced editions for CDPR have always been simply a final compilation of all patches, small fixes, additions they were requested for and small bonus content, delivered on a simple "we keep working on our games post-release untill majority of customers are satisfied, because we believe that is part of what you are paying for with this game".
It's not a remake or a remaster trying to reinvigorate the game, it's more of a stopping point to "OK, now we finally achieved the point where we can say "this is the game we wanted to make"".
My assumption, if it is true and if previous EE are to be believed is that it's mostly consisting of patches, fixes, and requested features.

Walking around massive landscapes, huge cities, beautifully detailed interiors, nicely detailed/fleshed out characters and nicely populated areas bursting with colour..... And VERY rarely a single fucking loading screen, it's like my pc is actually being used properly unlike FO4's shit optimization and constant loading screens for single rooms.

Flawed, differently in each game. TW2 is really feels like a hybrid between TW1 and a more modern outlook, but it's basically entirely broken and unballanced. It has some really neat auxiliary features, allows you to play a lot with various tools and to approach each combat scenario with forethought, but also allows you to cheeze every single combat scenario with combination of one spell and the roll option. Plus the targeting system is dodgy and in general, it does not feel very nice to play.
It's still miles more involving than TW1 combat, but it makes just as many mistakes as improvements.
TW3 is a lot more polished and generally feels fairly tight and does not have any OBVIOUS ballancing issues, but it's still very basic. The nice tactical options of TW2 has been mostly dropped because nobody has been using those to begin with - the control scheme is lot more logical and all features have use (parry option, dodge and roll options).
But again, there isn't much weight to it, and more importantly, it simply lacks variety sufficient to carry a 100+ hours long game. You'll basically see all it offers in the first 20 hours, and from then on it will mostly feel like going through motions.
It's not gamebreakingly bad - in either games - but it's never great by any stretch of the imagination.

I jumped straight into 3 and found it a bit hard to follow the story/backstory at first, who ruled what, who commanded each faction, what did they stand for, how did Geralt know certain people etc etc, luckily Witcher 3 has a great character list giving you their backstories etc
