It is up to the player, it's just kind of super obscure. Basically the person with the highest affinity by the end game becomes your beloved. However, if multiple people are at max affinity (which can easily happen if you do a lot of side stuff), only the LAST person you increased affinity with prior to a certain point in the story will become your beloved.
Amusingly, you can change your beloved between two scenes where they show up by changing around affinity values through violence or affection to other characters.

I'll tell you this; everything is appealing because everything is viable to beat the game with and even have fun. But if this is your first time, go with the fighter -- they're simple, fun, and sturdy. Assuming you aren't going to play on fucking easy mode, this is your best bet for not being overwhelmed by the game early on.

You can play whatever you want, really, it won't affect your game that much since it's not hard anyway, but if you want your pawn to do a specific thing you might need to teach it
You can also use Inclinations to dictate their behaviour

As for how they differ, Assassin doesn't have access to the best strider skills (soaring stone, brain splitter, hailstorm volley and Fracture Dart)
Assassin is better off using the sword instead of dual daggers as well since they can just gut large enemies with it.

Magick archer has homing missiles that auto-aim to sticky targets.
They probably do less damage overall, and namely deal in magic damage, but they're overall more versatile and can be a good group-oriented class, which is everything during Bitterblack.

Strider gets way better bow and dagger skills. Fracture dart and downpour volley are both great damage/AoE, and brain splitter fucks shit UP. I'm sure there are others, but those stand out quite a bit.

Also they're slow (fighter has a lightning fast dash to constantly close distances), don't have a block or dodge (only a counter and hyperarmour on certain skills) and have dick all range capabilities
Fighter can tank better because of taunt/block, can move around the battle much faster and actually outputs more damage than Warrior.
Again you can complete the game no trouble as Warrior, it's simply not as good as other classes though.

No. They don't forget anything. The only thing that might happen is that your pawn will use a tactic less and less (too complicated, fails to use it every time...). It takes some time though.
You can refresh that by playing a bit again.
You can also check your pawn habits by letting it get possessed: it becomes hostile toward you and will try whatever it knows to kill you.

The attack buffs from fighter and warrior are the main ones you'll want. One is a 10% boost and the other is a 20% boost, and they are multiplicative. I don't remember any others standing out, the ones you'll get between those three classes are all pretty great.

Bastion isn't optional on hard mode. It doesn't give you defense like it says, it takes a flat amount of damage off any incoming physical attack. On hard mode it takes off 225 damage from each attack.

In regards of third person rpg's it's probably the best I've used but the keyboard feels a bit unnatural as you are based on an 8 degree movement system. climbing can be a bit awkward but not too bad. Totally possible to enjoy with a kb & m

if you're not playing as the same class then pawns will only learn vague things.
Assassin likes to climb big enemies so your pawn will take after that, climbing things is alright for yellow pawns since they have a skill to slash shit while climbing.
other than that they'll pretty much just learn how you grapple/throw things since you're not the same class (although assassin/strider do share a few skills, perhaps if you equipped your pawn with the same skills as your assassin it would learn well, but you're equipping inefficient skills on both your assassin and pawn if you do that).
