I've only played 1, 5 and parts of 3, but what exactly is the relationship between Big Boss and Ocelot? One minute they're trying to kill each other, and the next minute they're the best of friends.

Your picture explains it. They are both gay but Ocelot is tsundere so he doesn't show his true feelings at the beginning and acts like he doesn't like Big Boss. After a while he truly falls for the boss and they become a couple.
It is not really shown in the ingame cutscenes but if you listen to all the codec calls and cassette tapes then you can figure out their relationship.

What's their relationship? Contrived worship from Ocelot and a degree of mutual admiration. Until MGS3 came along there wasn't really a relationship as far as we knew. Even after MGS3 there wasn't, really, though it was clear that they liked each other.
PO and MGS4 came along and shoehorned in a bunch of soap. Ocelot was extremely loyal to Big Boss and his Outer Heaven thing, so he worked as an agent of the Patriots while secretly plotting a way to take them out.

Ocelot being gay isn't too much of a stretch, but there's no reason to think Big Boss is even bisexual. His only romantic/sexual relationship we see him have is with an attractive blonde woman, and he later states to Snake that sex doesn't do much for him anyway.

They fought a lot in 3 but BB often gave him advice while making fun of him. In the end Ocelot realised he didn't respect his own superiors and respected The Boss and Big Boss. Between the events of MGS3 and PW, Ocelot ended up teamed up with most of the people from MGS3 and snagged them the other half of the philosophers legacy. By the time the team went to shit he was already siding with BB instead of the other knuckleheads. Soon they were super bros, cue MGS5 events.
