I didn't play Dark Souls until quite recently, to the point I haven't really finish a first run through the whole thing just yet.
However, playing for as long as I have, I think the gameplay and mechanics are what a good sequel for a Soul Reaver game could have been.
Also Castlevania games would do pretty good with similar combat mechanics.

There are people who think Cleric Beast is harder than Gascoigne and generally recommend new players to go for Gascoigne first and then Cleric Beast

It kind of makes sense for Gascoigne to be the first boss since Cleric Beast is more like a bonus/secret boss, since killing it doesn't do anything other than giving you an additional weapon, it doesn't progress the story in any way

Mount and Blade's combat is very different from Souls. Unlike Souls it is directional, has no stamina, you have pretty much full control of your character while attacking and doing stuff, it's basically quick and fluid unlike Souls where you get locked in an animation etc.

Severance Blade of Darkness is the most similar game to Dark Souls among those I've played.

Eh there were some copy pasted movesets but it wasn't based on weapon type and even when there were shared moves there were plenty that didn't share EVERY move with another weapon. Take the generic Mace and the Heide Knight Sword in DS2 for example. Their R1s are identical but they aren't even the same type of weapon, and the rest of their moveset has various differences.

Outside of very rare instances Ds, DS1, and Bloodborne have fucking suberb hitboxes and DS2 has more cases of bad than those but still nothing to warrant "some of the poorest in the industry".
Animations of fucking fine, some better than others but nothing qualifies as garbage.
Iframes are in most games and Souls has some iframes but nothing in the game is reliant on it. You can use them to your advantage but dodging is just as well without trying to abuse them.

The game's engaging but as a whole it's really not that hard, I'd say large parts of it (especially bosses) are disappointingly easy.

At least as a knight. You just do a ludicrous amount of damage using the combo, many of the level bosses go down in a single one. And of course you have to have a brain and do things like switch to blunt for enemies that take more damage from it.
