Try Far Cry, the original one. Get x64 patch (it's called "AMD exclusive" but it really isn't), it supposedly fixes the infamous "enemies shooting through tents" bug*I 'm saying "supposedly" because the bug is rare enough I've seen it like once or twice during 4 or 5 playthroughs with various patches) and makes the game more stable on modern PCs. Play it on Realistic! Don't use the quicksave cheat! Have fun!

Back in the 90s, Japan thought the west were a bunch of plebs, so they reduced the difficulty of all their JRPGs to make it as playable as possible for the western consumer. This game however, not only did they ignore toning the game down, but they did the COMPLETE opposite and ramped the difficulty way up. This was one of the most arsehole clenching, hair ripping, rage inducing I've played as a kid.

dude no just go to an enchanter and buy a bunch of scrolls. gold is only difficult to come by if your trying to level up efficiently and not fuck up your stat modifier fucking leveling up endurance and not having the health boost be retroactive is a total pain in the ass. Practically just want to start a nord/redguard/orc take the lady as birth sign, then go and grab the bittercup so I could have like 95 endurance at level 1.

XCOM, pretty much any if tge strategy games from the series. You're thrown into a losing fight from the start, you might get some wins but you can throw 12 hours into a game and still lose a continent or research the wrong things or blow your budget on bases instead of the right gear or lose a really good trooper or just have them injured and taken out of the fight for a few days or month and really fuck up your entire strategy.

Defense. I have had Terror From the Deep and Apocalypse for a long time now but haven't gotten around to them yet. Might try out Xenonauts before I go back to those because they haven't aged that well the user interface is kind of a pain with managing Time units and facing the right direction and stuff it's easy to accidentally click the wrong way and lose time units and totally fuck over your entire squads movement formation not having cover fire from that one person. Also like it doesn't tell you how many TU's it is going to cost for a movement and facing you sort of got to keep track of that yourself.

Sans and Undyne weren't even hard. If you use items you can easily beat each Sans within 30 tries at worst.
Undyne is also easy as fuck if you just memorize the arrow patterns when you're green. After you do so, you can do as shitty as you want during the other attacks and be fine as long as you watch your health.

Hard only in terms of reaction times and understanding of game mechanics? Some of the hardest games I've played in the past few years were the Grimrock games but they're hard for very different reasons, puzzles and all that so I doubt you're interested.
Really satisfying to beat though, I feel like kids these days only care about their hard clutch noscope headshots and not games that force you to think fast or think many of your moves in advance.

I can't remember the name of the game but it consists of a sequence of puzzles each of which are timed (with proper and player time). The little robot you control can go backwards in time (I think you have to step on certain platforms to do it). The puzzles get extremely difficult. Its not fucking chronotron either
