Canonically Good Hunter is the strongest as he's the only one who is capable of killing Great Ones. Even Slayer of Demons can't kill Old One and he's stronger than both Bearer and Chosen.

The lord souls he got were shitty and spent up though.
If we're talking purely mechanically here then the DeS protag wins.
His roll has more i-frames and goes way fucking farther. His attacks are a bit faster (weapon dependant) but the real kicker are his spells and consumable.
He has access to 99 items that heal to max (and have an animation much faster than popping a Humanity, though Divine Blessings are pretty OP in DaS1) and 99 items that restore his mana to max, giving him an unlimited arsenal of spells.
He has a spell that, even if you do kill him, restores him to life, which he can cast whenever he wants to again after it's used up.
If the fight breaks down to endurance, the Scraping Spear will reliably break all of the Chosen/Cursed Undead's equipment more reliably than their Cloud/Surge spells.

Well technically in demon's souls you can become an unstoppable demon lord so he kinda wins, then again both the chosen undead and bearer of the curse don't lose their minds when they go hollow so they could go against him indefinitely until they win, then the chosen undead and bearer are pretty much the same shit since they both defeated the lord souls, at that point the bearer wins out of QOL features since he is completely immortal and immune to the curse after completing the crown so there's that.

So then the Hunter does indeed have the most impressive challenges to overcome? Most bosses in Bloodborne are far tougher than other Souls bosses when it comes to relative strength to trash enemies in terms of their health pools and damage.
Of course, all of this is just ignoring how utterly ridiculous it is that the Hunter can kill the Moon Presence. There is no boss in a Souls game with as much power lore-wise. The only similar thing is the Old One from Demon's Souls which you can't fight.
