I grew up playing Total War. Medieval 2 was my favourite. But I can't go back now after playing the new ones. The camera, controls, and UI are so clunky. The newest games look nice and have good controls but they run really badly.
OP I recommend Shogun 2, it's the only recent Total War game that looks nice and runs well. Attila is one of the best Total War games and I would recommend it but fuck 20 FPS battles.
Shogun fall of the samurai, you get samurai and civil war style rifle lines and artillery. However I liked empire so take all that with a grain of salt.

Honest opinion though, pick the setting you like most. I personally can't stand Empire, Napoleon, Shogun and Attila because of the time period and/or location. Kind of disappoint especial since two those are apparently the best.

Main issues with Empire, Napoleon and Attila for me is the lack of proper mod support. They complained about nobody using the map maker for shogun 2 since they brought it out far too late and now they don't want to do it again, their loss.
I personally wouldn't play Empire or Napoleon either, they're shit for their time period. You can at least do some historical stuff in others but not in the musket games since the guns are laser accurate.

I'll be honest, I haven't checked the mods forums yet but there's bound to be something that's meant to change up the skins, recruitment system and public order to suit your fancy.
Shogun 2/Fall of the Samurai or Attila. Medieval 2 has some good total conversion mods but the base game doesn't stand out anymore, same with Rome and its period mods.

Fall of the Samurai also does similar type of warfare (or at least, how it actually plays out in the game), but better, with campaign map lacking the crippling handicaps of Empire (completely worthless AI, large scope but very little detail - France is just one province for fuck's sake) or Napoleon (very limited scope, scriptedness)

I liked Medieval 2, Shogun 2 and I don't mind Attila and Rome 2 but the last two do have some issues with the game shitting itself.
Attila, Age of Charlemagne is really good though since the map is smaller and is about as close as you can get to Medieval 3.

I play EU4, Civ 5 and other strategy games. I'm relatively good at each of them (can beat deity AI) but I just do not understand this game at all. I've got shogun 2 gold edition and I've played 10 hours of a campaign and I just was confused on what I was doing wrong. Each of my cities had huge revolt risk for some reason, I tried putting troops and geisha in the towns but it made my armies too weak to win battles. I don't understand what the fertility of land did since farms all provided the same amount of money. Diplomacy was confusing, the AI tried to cuck me even though we were on the same supporting the emperor side.
Anyone got any good youtube players who are very good at the game and explaining it. A bit like Marbozir but for Total War not Civ.

You probably had revolt risk due to lack of food.
In the bottom right you have a number of food to use, you generally want to keep that number to at least 1 or 2.
If that food drops to under 1 then you are going to get fucked up so much that the regions fall apart.
If you choose a different religion faction then you need to build or sit in the province to get your religion to take over.
If the region is angry then build the magistrate building and put magistrates in the cities till you upgrade the magistrate buildings.
Generally they will be pissed for a few turns after conquering them because if they didn't would just freight train their shit.
Everyone is against you because its a civil war for control over the Shogunate, because if you are Shogun you rule the land of Japan.
Ally with some people, get marriages when you can to cement ties and trade when you can.
Wipe out small, 1 to 2 castle lords and try and get bigger ones on your side.
Don't bother with cavalry unless you are Takeda since they enemy spams Yari Ashigaru and Samurai and they fucking demolish your cavalry, use bows, spears, swords and sometimes naginata samurai and monks.

Unless the AI decides not to go full retard, puts their bows out of range of your guns and fucks you shit up while you hide in the castle like a bitch.
Guns are only good when you upgrade the shit out of them and even then bows have better range and id rather bow the shit out of a castle than hope guns work.
Then there is rain that fucks up guns and they cant even shoot in the bad weather.

i haven't played enough of the newer Total Wars, but the first Medieval will always be in the top 3 for me.
