I'd like to see both. Hell, they could probably fit it into one game. Have a time skip as a sort of homage to OoT. Play as Link in his Prime, striking down the big bad then, as a wizened hero, an evil arises before Old Link dies and the cycle of reincarnation continues. Or passing down of heroic spirit, however you want to put it. I mean fuck, if they put as much effort into it as OoT in the modern day, possibly on the NX, it would be a huge fucking deal for Nintendo.

Middle aged Link facing a new challenge as a battle hardened veteran sounds badass, but more so to westerners than anyone else. Majora's Mask or Zelda 2 is probably the closest we'll ever get to this.

It would be very jarring playing as some gruff, older Link with Skyward Sword's tone and art style, for example.

I would have loved to see an older Link, still searching the lost woods for navi, having saved countless worlds/dimensions that he stumbles into, to arrive at another world where he meets the happy mask salesman again, who hasnt aged a day. HSM doesn't even need to be a major character, just present and aware that its the same kids hes seen in two other worlds. Have time magic or some shit too, i dont know, i just know i always liked the idea of the hero of time destined to wander different dimensions for eternity, saving them all but never finding solace for himself

Personally I think it;s mainly nostalgia.
But really zelda stories are pretty great for games.
They are simple and easy to digest without being condescending or childish and are done well for what they are.
I play zelda mainly for the swordplay and adventuring aspects but the story has always been a nice touch, especially in games with a more thought out story like MM.
One thing I enjoyed in some games is roaming around post game and enjoying the reward of seeing the land saved and peaceful because of your good deeds. A shame that it's not very common in the Zelda franchise

It's funny, even though every other console Link since then has been given more and more personality and facial expressions through cut scenes and the lot, the Hero of Time still comes off as the most developed Link due all of the sheer crazy shit he went through, which the player actually gets to experience in-game.
Every other Link since then has had it pretty damn easy on their adventures, barring maybe WW Link to some degree. Sure, maybe their companion died or left them, but in the end their journies were pretty safe and shallow, and they rewarded to a certain extent.
The Hero of Time? Has all of his efforts essentially erased by Zelda at the end of OoT. And he has to live through this time and time again in a purgatory-like hell via 3-day resets in MM. He had to have felt a tremendous amount of guilt for giving Ganondorf the chance to open the sacred realm, which lead to his rise in power. Then he had to experience all of the traumatic and terrifying shit like the well and the shadow temple; seeing that the very people he was rescuing aren't so great themselves either.
And unlike TP, SS or WW Link, the game heavily implies that he was initially a total outcast (with the only exception being Saria) and that he was kind of socially retarded because of it, give or take some of the things that NPCs say to him.
He had a rough journey with severe ups and downs, while every other Link that followed after him passed through a cakewalk. And you can clearly see that many other fans share the same opinions, which is why dark theories like the Link is dead theory became popular in the first place. He's the only legit tragic hero of the lot and that makes him unique.

To expound further, every time he gets close to someone they leave him for ever. Both his fairy companions leave him, his best friends become sages, meaning he will likely never see them again, the princess, who it is implied harbors feelings for him, sends him back in time, removing herself from his life in a misguided attempt to give him what she took from him, in the process taking away living legend status and love. Hyrule Historia confirms that he made it out alive, returned to Hyrule, maybe became a royal knight and died a normal death. His soul became restless due to the regrets of never being remembered as a hero. Hence hero's SHADE. Shade being another term for ghost, he's just a spirit, not a stalfos.

Well, Yoshiaki Koizumi wanted to develop Link into a character and really delve into some decent story and lore for the franchise, but Miyamoto and Aonuma wouldn't allow it.
So he threw in little dialogue clues, lore bits, atmospheric cues and whatnot while Miyamoto and co. weren't looking or paying attention. He confirmed this in a huge interview, regarding Mario Galaxy of all things. He pulled off the same trick with Rosalina's storybook.
That probably explains why the Hero of Time in particular comes off as unusually more tragic and developed than the other heroes and why his games have such an unsettling, eerie feel at times. It honestly wouldn't surprise me if the whole stalfos-skull kid curse foreshadowing in the lost woods was his idea. It wouldn't surprise me if MM's ending was planning to be a tragic ending either until Miyamoto and Aonuma refused it, leading to an open ending instead.

IMO he's experienced more traumatic shit than most hylian men, but he's still very naive when it comes to social norms. Like he still doesn't really grasp marriage, parent-child or familial relationships, romance, blackmail bribing, etc. You pick it up from dialogue cues from NPCs in MM.
