Originally, I'd just put games into categories based on series, and one-off games were left uncategorized.
Ever since they (fucking finally) began allowing a single game to be put in multiple categories, I've been using the following categories for all games as well: 100% Complete, Finished, Unfinished, Unplayed.

I have one category to hide all the beta testing exe's and separate multiplayer exe's and all that shit, rest is uncategorized.
Alphabetically.
Considering steam has a built in search function I see no reason to set categories besides autism.

I've tried out several sorting systems. Generally, I find it better to categorize not by the game's technical category, but how I'm likely to categorize it.

slow internet. Also I have this weird thing where if I have something downloaded/owned I won't want to play it again. Like if I delete the local content or trade a game in I will forget about it for a while and down the line buy it or play it again and be like "oh yeah that sucks." Whenever I get a new game I throw it into my backlog and then I play through them in alphabetical order.
I try to finish all my games but if I hit a wall where I'm done with a game I toss it into its appropriate categories. I have about 50 games in my backlog atm.
