Honestly; neither.
Yen is the hardass woman he fell for because she was and is a challenge. They get along and find romance through a combination of a Genie curse and because they have destructive personalities. Geralt in particular has issues with stability due to decades of nomadic, Witchery lifestyle and is conditioned to seek pleasure through chaos. Yennifer represents that. Ideologically they both want different things; Yen is classy, judgement, headstrong, and seeks power. Geralt is attracted to this aggression but in reality could never deal with this long term, hence their continued on-and-off relationship in the books. They're basically the cliché bad-for-each-other couple that have good intimate chemistry but would never last long term.
Triss is sweet and a bit more vulnerable but too much of a fantard to Geralt. She will, as necessary, lie and make herself excessively submissive to Geralt if it means she can be with him. Geralt is attracted to the easiness of fucking a hotty sorceress, and the peacefulness she adds to his chaotic lifestyle, but again it could never be a long term thing. Triss offers no emotional or adventurous challenge, and this is why she's always been a sidestep or break. Geralt likes the idea of settling down but could never actually do it, and would be drawn back into adventure and chaos once again.
And that's the contradiction of the two. With Triss Geralt finds peace, but no chaos and adventure. With Yen he finds no peace, but challenge and chaos. He can't hold stability with either of them, and instead resorts to flings and wishy washy relationships. Geralt ultimately is unsure if what he wants, probably due to emotional stunting not from the mutations but from decades of his Witchery lifestyle, and find himself falling back into tired Witching routines as it's the only thing he knows.
True Geralt is really doomed to Witch and wander until he dies.

As far as I know, the games are in a seperate canon from the books. That is to say that any further official book releases will not take the games into account, but the games use the books for backstory. I'm pretty sure Geralt is canonically dead as well. Just look at the games like fan-fiction.
