It's the same reason Spiderman's Spider Sense pretty much never works: plot convenience and forced feels.
If they could have just instantly revived her (which should have been possible given that the blade didn't hit anything overly vital), then all the weight of the scene would be lost. Instead, the scene has taken on an ascendance, to the point that people who have never even played FF7 know who Aeris is, what she's about, and how she dies.
