It's addictive, it's not good. You soon realise that combat is horribly imbalanced and repetitive, that although there seems to be a lot to do in towns it's pretty much all the same, that many quests are very similar minus some of the major ones, and that many quests and caves have the same layout in them.
I'd love it if it had good writing, good quests, and was an actual fucking RPG like Daggerfall, Morrowind, or even Oblivion, though Oblivion steers toward being more of an action game than an RPG.
It somehow achieves being worse than Oblivion, Fallout 3-4 and Dragon Age Inquisition.

I have a feeling that you'll start to change your tune once you figure out that the game has a really shallow economy. By level fifteen you'll probably have more gold than the high king. Then it's just a slow grind to craft and enchant your armor.

I know that feel, i got fucking bored of doing the quests and only continue to use the DLC because it added shit like new weapons and vampire invasions, after installing a few gameplay mods, including one that allowed me to both skip the beginning and pick different starts, the game became so much more fun, no more quests and "you're the dragonborn, Harry", i could just fuck around as a mage, necromancer, bandit or whatever

It's not fucking good, if it's your first time playing I can understand your feelings though. Give it about 30 hours or so and I think you'll change your mind.
Buckled and bought Legendary Edition. I'm kind of having to force myself to care about the people and places. There are some neat things but I imagine after seeing it a thousand times it won't be as interesting. Seems like some builds might not be viable, for instance I wanted to go Conjuration/Alteration 1handed and enchanting but Conjuration just doesn't seem to be a very powerful school of magic. I imagine there are mods that fix that but it's kind of crushing my character and I don't want to start over. I like Morrowind and Oblivion but this is so dry and detached that I'm having trouble keeping up my level of interest.
Having said that I'll take mod recommendations, fun builds, or general suggestions to make my time more interesting

I had the exact same problem. Unfortunately, it doesn't get any better. There aren't any characters in the game who have enough going on that you can actually care about them. The only possible exception is Serana from Dawnguard.

If you time it correctly you may be able to go undetected through the majority of the quest. There is a part of it that takes some serious sneak to get past undetected but it's pretty immersion breaking.
