Well its like any japanese game (or anime) that takes place in a clearly western civilization-based setting, but everyone speaks Japanese.
Because the ludicrous amount of extra work that would be involved in writing a script in the proper period and locational language is vastly disproportional to what they'd actually gain from it, which at best is satisfying some random nerd's autism on the internet.
Now if there's a distinct acknowledgement that they're speaking this out of place language, then it gets a bit silly.

I honestly think it would be a cool idea that in a game where you visit a alien planet your character has to learn the language by having enough interactions with npcs and in the mean time you have to try to find a companion that can function as a translator. And as your character slowly learns the language certain words appear in plain english in the subtitles.

This, but it sucks when the game/series/book/whatever gets localized to other language and they keep shit in English. I think about this a lot and it triggers me everytime it happens.
For example, surnames with meaning related to the character like Goldbeard, Treehugger or Ironwill.

creating a whole new language and alphabet is pretty complex and brings nothing to the game, people are able to bypass the fact that everyone speaks english most of the time, because it's simple.
sure, the could use an alphabet that just has diferent symbols, but there's still the problem of making a whole language, and you need people for that, people you could just not hire in the first place and spend money on other stuff, like good designs and stuff.
that being said, the extra effort can be worth it in lore-heavy games, especially if you just create a new alphabet.

I suppose it could be useful for a truly spectacular tolkien game where the unknown language is Elvish, which basically exists thanks to tolkiens intense dedication to his work. The extra effort then could go to making sure it all feels natural fro someone who might have really learned Elvish.
Also there might even be a way to use it where it isn't even a real language that you are learning and instead it is a lovecraft type situation where the "language" is that of the ancients and the progression is simply the player is being able to comprehend the sounds given off by these ancient all-powerful beings
