Original campaign is so-so, first expansion is okay, second expansion is great. Then play all the fan-made modules, of which there are many.
I feel like Dungeon Siege never got the appreciation it deserved.

Baldur's Gate: Dark Alliance and its sequel. There were also the two Champions of Norrath games that had similar gameplay. I haven't played them myself, but they're supposed to be pretty good.
