There is a high difficulty mod for the PC version that's pretty legit.
It's still possible to make it not so hard by grinding a lot, but if you don't grind it is quite difficult.

Depends on what "easy" means for you.
Sure knowing what to do and what tools are available to you at any given point in the game makes all FF games trivial, but just playing through blind will have you have a hard time against plenty of dungeons and bosses in all the early games sans IV.
Only that stupid Weapon boss that can literally remove any party member from the battle at will at any point on the PC version.
Everything else is pretty easy.

If you don't like isometric RPGs and you don't want SRPGs, that's the reason for your difficulty. Older western RPGs on average are going to be where you'll find the most difficulty, or some Japanese SRPGs.
You might want to look into roguelikes. This is not something I have any familiarity with myself but maybe some other anon here does. They are definitely supposed to be harder than other types of RPGs.
