That's the thing. Just because it carries a Fallout name doesn't mean it has to be the same game as before. They tried something different. New setting, new atmosphere, new gameplay, and I think it turned out good. It just further expanded the Fallout universe and we went from desert settlements to destroyed urban areas.
If you think it would have been a better game without the Fallout name then you are limiting yourself. Franchises shouldn't have a set formula, they are supposed to create universes. Now that you mention Star Wars, look at how SW games are. Every game is totally different and that's acceptable but when it's done to Fallout it's instantly trash.

And that's exactly why Fallout 3's world and setting is so stupid. It completely ignores internal consistency and goes against pre-established lore to create its own hodgepodge of "Fallout"-y factions and themes in a location that makes no sense. It's like Bethesda tried to reboot the franchise but then decided half way through that they would just make it a 3rd game instead.
Note that I have no problem with the FPS-RPG thing Bethesda turned it into. But the reason people say NV is a better Fallout game than 3 and 4 is because it has good world building and quest design rivaling Fallout 2's. It's like a CRPG but as an FPS. Whereas 3 and 4 are just dumb action games. Enjoyable to play maybe, but not if you want to get any depth from it.
And to what you said about liking the games equally and wondering why people can't just enjoy them for what they are, it's because 3 and 4 feel like insults. To me at least. I can't enjoy them for what they are when they use the Fallout branding and Fallout factions and have such insulting world building and quest design. I think many others feel the same way.

What builds a world is the people living in it, the factions they form, and how they create and interact with those locations. FO3 is a bunch of random bullshit thrown together because it sounded cool, New Vegas is a well thought out, coherent map where everything has a reason to exist and ties into the rest of the world.

why did you do radiant quests if you didn't like them? granted the game pushes them on you fairly hard but they ARE entirely optional, you don't have to report back to Preston and receive another quest, you can turn off the loudspeaker at Ft Strong so you don't receive them, and Radio Freedom is literally the worst station (also get Chicago Blues Radio mod mane) so it takes literally zero effort to avoid them
also this is why you shouldn't neglect stealth; killing raiders got old before i cleared the first location, and luckily even the worst "kill raiders" quest only requires you to kill their leader, so you can turn it into a (minor) stealth challenge if you so choose
at some point i got quest tokill the raiders lead by Red Tourette or whatever she's called, the one with a US Covert Operations Manual on her table next to the ransom lettersand after reading the terminals i just decided failing the quest was preferable to killing her even though she's "raider scum" and that was when i stopped doing radiant quests altogether, and i don't even think that was unintentional on the part of Bethsoft, but what do i know
not to defend radiant, just sounds like you gave up on the game fairly easily
