Undertale's gameplay is clever but not deep, if you're curious. You only ever have one attack with a light timing element, but when you're defending against attacks, they're little bullet-dodging segments you can control. I like that as a concept.
I think the game kept its offensive combat simple because it encourages you to do the SMT-style negotiation instead, which I think it did pretty well. I would've liked more ways to attack just in case I want to do a murder run, though.
You're right to be skeptical, but it's sort of light and clever.

The main selling point is the narrative and the atmosphere. The setting and the story are actually unique, feature lots of gallows humor and get very morbid and depressing as the game progresses, exploring very mature themes.
The gameplay isn't all that, but good for an RPG Maker game. Battles are straight turn-based Dragon Quest style so if you have an allergic reaction to that, you probably don't want to touch it. However if you don't have an irrational aversion to turn based combat, there are 30 optional party members to play with as well as useful status effects. Exploration is sidescrolling with some metroidvania elements and lots of secrets and optional stuff that you won't get in one playthrough.
Graphics are meh, but have a decent aesthetic going on for them despite having simplistic spritework. Music is batshit insane but really great, unlike anything I've heard in a video game before.
Bottom line if you would like for a game to make you feel terrible things and can stomach turn-based combat, you'll like it. If you're a gameplay over story type, then maybe you won't like it as much.
