How the fuck do you beat this guy unless you have a strong as fuck weapon? defiled chalice dungeons gave me less issues than this guy still does after numerous playthroughs. I made a new rifle spear build and I couldn't get past this boss until I upgraded my axe and spammed charged R2 attacks with fire paper and beast pellets. First phase is alright, and the second isn't too bad, but the third is insanity difficulty and you need antidotes to deal with the aoe poison which are in very limited supply.
I've tried throwing blood cocktails, but in the third phase he's so fast that you can't hit him when he's running away from you anyway. FUCK YOU BLOOD-STARVED BEAST

He's honestly the second-hardest non-DLC boss after Logarius.
Just leave, go somewhere else like Hemwick or whatever, and level up there. Then come back and fight him later.

Take it from someone who beat him with a level 4 character, just angle your stick up and to the left. Don't even bother to dodge. Just walk clean under his right arm and whack him a couple of times. Go for parries if you're feeling ballsy, but ALL of his attacks will pass clean over you if you're on his right side.
He's a little hard at first, but he really isn't so bad. Just get good and dodge.

If you have a lot of health you'll be alright, but otherwise a single hit and poison will kill you unless you use an antidote pretty much straight away. You don't have time to back off. I usually deal with it by healing through it while trying to get to a safe place, then using an antidote and healing again, but that strategy will only net you a couple of attempts and it assumes that you've found a reliable way to damage the boss safely or you're going to run out of materials very quickly.

I don't want to have to fight bosses. They can take up so many of my vials and bullets. Then I have to go farm more vials and bullets.
I do feel like a lot of weapons, while unique, were lacking in comparison to the saw cleaver and hunter's axe. Outside of PvP those two weapons just rekt the base game whereas a lot of other weapons struggled to keep up from both damage and stagger potential.

I suggest doing it on NG, entering around level 50 with at least a +6-8 weapon. Seriously, for some reason there is barely a difference in difficulty between NG and NG+ for the DLC, the monsters have like 10% more health while you hit 4 times as hard as in NG (because of all those fancy blood gems).
It's also really fun to go through the DLC on NG because enemies there drop really decent Blood Gems which are huge upgrades to your weapon at that point. Feels pretty rewarding.

I just like the Hunter's Axe, not just for the stagger, but also because on a dime I can go from juggling a strong axe and a gun to a long range weapon and back to the axe again. The cane's transformed attacks are great crowd control as well without leaving yourself as open on mistimed axe charged R2s. The axe is still the easy mode weapon for the first portion of the game, but the cane and cleaver both excel in different aspects depending on your play style.

The best farming spot is in the DLC at the Nightmare Church lamp. Sneak up and backstab the two big Cthulhu guys outside for 10 bullets and 6 vials, then kill the guy banging on the fence across from Ludwig's room for 6 more vials. Takes maybe two minutes, and you're still right by the lamp to quickly rinse and repeat.
