In Wind Waker, Ganon was all "So my people lived in the desert and it was shitty, while the Hylians got to live in an awesome town surrounded by grass and water and shit." And you almost start to feel sympathetic towards him.
Except for the fact that even after he takes over Hyrule, the Gerudo are still living in the fucking desert and the only things living in the Castle Town are fucking zombies. Also, he somehow managed to turn the beautiful green grassland in front of Hyrule Castle into a fucking bottomless pit.
It's really hard to tell what Ganon was trying to accomplish in OoT. He won, and took over Hyrule. And then what? What did he even go through all that trouble for? To rule over a town of mindless zombies? He banished the residents of Hyrule and replaced them with zombies, he froze over the Zora's Domain, he locked up all the Gorons in their volcano and he left the Gerudo in the fucking desert, because seriously, you can't really do anything worse to them. What the fuck was the point?

That scene definitely humanized Ganondorf, it wasn't supposed to paint him as a tragic or sympathetic character. He's not telling Link this because he wants Link to feel bad for him, or even to provide context to his actions; Hyrule has always been Ganon's obsession, and this speech is a brief moment of introspection where he recalls the moment he first became enamored by Hyrule. It's supposed to demonstrate the extent of his obsession that centuries later, even as Hyrule is a dead kingdom that lies on the bottom of the ocean, Ganondorf still wants it for himself.

Reminder: we have never had a game set in the Imprisonment War where Ganon was sent to the Golden Realm, which he later corrupted into the Dark Realm. This is the most classically epic period described in the whole Hyrule mythos that sets up the classical sword in the stone/ancient evil/prophesized hero story in LttP, and we'll probably never get a proper treatment.

There are also implicitly a different set of seven wise men that actually do the imprisonment, no the ones from OoT. It's a crime how they've ignored the badass lore setup they were handed with LttP. They should have just made a prequel to the prequel since the story seems to get cooler the further back you go.
