When a game is designed around the idea of grinding for something, in a competitive enviroment, it just doubt it can feel entertaining. MMO's are like the opposite of single player in the sense that in SP games, you're the powerfull, every tool is gave to you so that you feel more powerfull. I am not saying they weren't always filled with grind, but back in the day the grind was just something you did on the side not the whole game. The game was about the community, interacting with other people, doing shit together, etc. Grind was just the mechanic for it.
Now grind is all you got. There is no community. Just meaningless railroaded grind. The whole experience is streamlined and interacting with other people is something that you rarely do, or even have a reason to do.

Gameplay wise, it's a shift in the right direction. But not enough to save the genre.
It's really not much related to the gameplay but the core design of these games. These games are made with them thinking about "what our players will grind for" instead of actually making a world with challenges related to it. I remember that the whole idea was just living in this world. Not in the sense of making real life chores in digital space, but actually getting immersed into the thing, creating relationships, etc. Not just filling a bar or playing dress. It can be CRPG, ARPG, tab targetting or whatever...as long as mmo's are designed as a hamster wheel in disguised, it'll go nowhere.

I have never played Final Fantasy XIV so I wouldn't know what it's like, but out of the MMOs I played recently such as WoW and Tera Online I can tell you with certainty that what counts as a "community" there is a pile of worthless shit.
"interact with people daily" is a pretty vague thing to say by the way. I interacted with people daily in WoW, but it had no community. Most of my interaction revolved around shit-talking or interacting with my private cliques (guilds, friendship circles, etc).
