Should I use the 60 FPS unlocker? Does it break physics?

Yes and yes.
The only real problem 60fps introduces is that 2 ladders in the game are bugged, if you slide down them at 60fps you fall through the map.
If you climb down them it's fine.

Completely worth it for 60fps, I went back to 30fps when I only had my laptop handy and it felt terrible.

The roll to the one little platform to get up to the crows nest and the jump in sens fortress are broke at 60 FPS too

I did both of those at 60fps with relative ease.
They may be more difficult than vanilla but I wouldn't know.
But the ladders are a bug that actually kill you for playing normally, rather than bugs that make it harder to get to somewhere.

If you need to jump anywhere you may need to go back to 30fps, since you jump a shorter distance at 60fps. If you're using DSfix, backspace switches you from 30fps to 60 and back, so just use that if there's a tricky jump.

The only things it breaks are some ladders and jumping.

If you need to jump or slide down a ladder, lock the framerate again. The default bind to toggle the framelimiter is backspace, but you can change that in the ini.

Don't bother unlocking the FPS.

It just opens the gates for potential problems and the animations are designed for 30 fps so they just come off as floaty.

Play at 30, feels jaggy for half an hour, then your eyes adapt and you're fine.

Am I the only one that is always thinking, on a semiconscious level, about what their face looks like?

Like I'm sitting here typing this and while I'm thinking about what to put after this sentence and all that I also have this mental image of what my face looks like. It could be inaccurate but I'm still thinking like "oh my eyes are in this position, my mouth is shaped like this right now, etc." All the time it's like that.
